Potato Hash Recipe

Recently I’ve been making a lot of hash and figured I would share this super easy, versatile and delicious dish. I don’t really follow a specific recipe but that’s kind of what makes hash so great.

The main ingredients are potatoes, any meat of choice (orHash dish leave it out), any vegetables of choice, eggs, and any toppings you would like! I’ll share my go to version of this recipe but feel free to add or change anything you would like.

Ingredients:

– Bacon
– 2-3 Potatoes (depending on the size)
– ½ an Onion
– 1 Bell pepper (whatever colour I have)
– 2 eggs
– Spicy mayo
– Cheese

Steps:

1. Start by chopping up the bacon (or your meat of choice) into bite size pieces. Then frying on medium heat until nice and crispy. Remove from pan and set aside for now.

2. Chop up potatoes into even cubes and dice the onion. Fry the potatoes and onion in the pan over medium heat. If you have fat in the pan you can use that to fry them, if not you can add vegetable or canola oil to fry them up. Season the potatoes and onion with salt and pepper and stir often until the potatoes are crispy.

3. Chop up the bell pepper and add it to the potato and onion mixture. Stir until the peppers are warmed through.

4. Add bacon back into the pan. Turn the heat down and make two nests in the pan and crack an egg into each one. Cover pan with a lid and wait until the eggs are fully cooked through.

5. Scoop hash into a bowl or on a plate, add spicy mayo and cheese.
